Almond ricotta
2 cups slivered blanched almonds*2 Tbsp lemon juice1/2 – 3/4 tsp sea salt1 dash garlic powder3/4 – 1 cup water Blend all ingredients till smooth. Its a fantastic dip with crudites or on bread.

Almond mayo: 150 g almonds50 g capers2 pcs egg yolk0.5 pcs lemon juice8 tablespoons cold pressed olive oil1 pinch of pepper1 pinch of salt Add all to a blender and mix until smooth and emulsified. Pile up the chicory leaves over the dip and optional some parm.
